The microwave has only a single rectifier, but it and the magnetron
function as a full wave voltage doubler, so the transformer sees an AC
load. The shunts just provide a current limit function for the
magnetron which is not a very well behaved load over the entire range
of oven loading.

You can always knock them out later, if you change your mind. But
they make a lot of sense to be in a welder.
